Abstract

Industrial plant for the fermentation of dough is intended to accelerate the natural fermentation in the break-making cycle. It compries a frame made from an assembly of girders supporting the various elements of the plant. The fermentation chamber is delimited by insulating panels; the inlet for the plates contg. the dough is at one end and the outlet at the other. The plates are lifted by an elevator in steps, each being equal to the space between two supports. A pusher carriage is supported on rails and runs from one end of the plant to the other; a similar traction carriage draws the plate onto a descending lift and tehy are deposited on a roller track. The dough is removed and the empty plates are returned to the starting point by a conveyor situated under the chamber. The latter is fitted with the usual means for conditioning the internal atmos. The structure of the plant is mechanically simple and it is devoid of the various endless chains and their driving mechanism of conventional chambers. The plates, and their contents, are always in suitable posns. without any risk of jamming.
