Abstract
Crystalline saccharose is produced from pineapples by removing aromatis from juice by heating, adding lime at about 75 degrees C, heating prod. juice with water vapour, adding kieselguhr to remove pectin, filtering and demineralising filtrate, concentrating prod. under vacuum and removing saccharose crystals by centrifugal drying. Provides further source of sugar, esp. in countries unable to grow sugar cane because of soil conditions. Enables use of over-ripe and spoiled pineapples. By-prods. are valuable. Aromatis distil off in first heating, are collected as aq. soln. Limiting is effected to pH 7.2. Water vapour is at 90-95 degrees C. Filter cake after kieselguhr addn. is calcium citrate. Demineralisation is by anion and cation exchangers; prod. may also be decolorised. Liquor from centrifugation is a molasses contg. glucose and levulose.
