Abstract

Novel synthetic culture medium devoid of milk, for the culture of lactic ferments contg. lacto-serum predigested with a vegetable or animal proteolytic enzyme, yeast-treated lacto-serum. crushed natural fresh yeast and a carbohydrate source of energy, which mixt. is sealed at pH 5.9-7.2. The predigestion is pref. effected with papain and the yeast-treated lacto-serum is pref. obtd. by incubation with Saccharomyces Cerevisiae. The energy source may be glucose and glycerol is pref. also added as a respiratory agent. Na citrate is also pref. added. The compsn. pref. contains 0.09-36% predigested lacto-serum, 0.06-24% yeast-treated lacto-serum, 0.01-4% fresh yeast and 0.001-4% energy source. The ratio of predigested: yeast-treated lacto-serum is pref. 9:6. Lactic ferments are used in prod. of cheese, pharmaceuticals and in agriculture. Avoids the use of milk which in previous processes had to be of high quality- free of antibiotics, pesticides and chemical prods.
