Abstract

Two-part cheese mould comprising a basin-shaped lower force into which an upper force descends like a piston, the lower face of the upper force being formed as a cup-chaped cavity. The lower force and upper force are fitted with liners made of filter sheet, e.g. in thermoplastic or textile material, formed to fit closely to the moulding faces, each liner being fixed securely to its respective mould force. The two forces are pref. made of thermoplastic material such a high density polythene and the liner of each force heat-seamed to it all around the edge. The mould is used for moulding 'Dutch' chesses and similar moulded paste cheeses.
