Abstract

Items to be cooked can include bread, biscuits, cakes, meat etc. and these are conveyed through a tunnel where they are exposed to infrared radiation with a wavelength in excess of 2 microns, pref. 2 to 20 microns, e.g. from catalytic elements which may be promoting flameless combustion of propane or methane. Air inside the tunnel is kept in motion to ensure homogeneous temp. conditions throughout the tunnel; pref. the air is circulated by fans, entering the tunnel via the infrared elements so that supplementary cooking heat becomes available by forced convection. Compared with conventional cookers employing radiation at wavelengths below 2 microns, the greater penetration of temperature to be halved and cooking time reduced by a third.
