Abstract
The dough, in pieces of a definite, wt. or vol., are passed between a pair of rollers and are transformed into flat cakes with a thickness corresp. to the desired length of the finished loaf. This thickness also depends upon the water content of the dough and its state of fermentation. The cake falls on an endless belt and is carried forward until its leading edge meets a loaded felt sheet; the cake, thus driven forward on its lower face and held back on its upper surface, undergoes a second rolling process. The rolled cake is then conducted to a pre-elongation passage and in its new form is carried to the elongation platform below the lower strand of the conveyor belt. It now undergoes a second elongation phase, in which it progressively attains the section and length required. At the end of the belt it falls, by gravity, on to another conveyor or a reception table. Lumps of dough, each for making one loaf, are produced in successive stages, which are regular, homogeneous and of good appearance in the pre-baking stage.
