Abstract
Support carrying the lumps in the fermentation phase is introduced directly into the oven. The plate has a stable anti-adhesion coating, pref. of a siliceous product and/or enamel, and pref. has ridges which define hollow lodgements for the lumps. The perforations are 1-3 mm in dia., distributed such that the plate remains rigid but the voids are max. The ridges may be in the form of sinusoidal corrugations.
