Abstract

Emulsions of oils or fats (consisting of glycerides of 8-22 C fatty acids) or of a vitamin E-active substance, opt. together with H2O and/or fat-sol additives and/or active substances (e.g. aromas, colouring, H2O and/or fat-sol. vitamins, carotenoids, pharmaceutically active agents, preservatives etc) in aq. sugar and/or sugar alcohol solns. (contg. 5 or 6 C-atoms per monosaccharide) pref. in sirupus simplex i.e. 64% sucrose, 36% water, contain ca 0.5-10 wt.% of a physiologically innocuous emulsifier; the emulsified particles have a mean size of 100 mu, the propn. of the aq. phase to the oil phase is ca 50-90 to ca 10-50 wt.% and the sugar or alcohol concn. in the aq. phase is not 50 wt.%. The emulsions (which may be clear, translucent or opaque) have very high physical stability and organoleptic props. Since they are free from usual non-ionic emulsifiers they can also be used for foods and feedstuffs.
