Abstract

Gelatin is produced by grinding, degreasing, depilating mellowing, neutralising with acid, rinsing, extracting, filtering, concentrating, cooling to gel and drying, where the mellowing is effected by an intermediate neutralisation by acid-saline (pref. H3PO4-Na2SO4), first mellowed by alkali-saline (pref. NaOH-Na2SO4), then a final acid (pref. H3PO4) mellowing, and congealing the semi-finished swollen product.
