Abstract

A mechanical, revolving cheese-cutting station comprises a number of identical cutting tools each descending into, and revolving in, a cylindrical container. Each cutting tool comprises a number of identical, generally vertical blades (4, 5, 6, 7) radiating from a vertical axis and equal in height to the container height; these descend with some edge clearance inside the container and serve principally to rotate the cheese; fixed to the bottom of these blades is a set of more numerous, but shallow, cutting blades (9, 10) with ground lower edges; these serve as the true cutters. To break the soft cheese down and subdivide it to facilitate drainage.
