Abstract
The juice is (1) ultrafiltered, (2) the ultrafiltrate is treated by inverse osmosis and (3) the concentrates from (1) and (2) are blended. Fruit are orange, grapefruit, apple, pear, grape, peach, tomato, raspberry, blackcurrant, cherry, bilberry, strawberry, pineapple, apricot. The ultrafiltering membrane is based on films of acrylonitrile copolymers with ionic monomers subjected to aq. thermal treatment, and having a cutting zone of 5,000-150,000. The final concentrte is lyophilised. The process conserves flavour and reduces clogging of the osmotic membrane.
