Abstract

The marrow bones are cooked in boiling water for a relatively long period and the marrow, after extraction by any suitable method, is placed in hermetically sealed cans and deep frozen to =-18 degrees C. When required for eating it is cooked in the can in a water-bath and when opened can be used as through freshly cooked. Between taking from the deep freeze and reheating, it must not spend >11/2 hrs at room temp. or even in the normal refrigerator.
