Abstract

A defated oil seed such as soybean flour is introduced through a paddle valve into an elongated tube into which steam is injected. The pressure within the tube is maintained constant by a spring loaded flap which exhausts the product in a textured state with the protein particles in a continuous phase. The flap is sufficiently resilient to allow large particles to pass and prevent the appts. from becoming blocked. Pref. the tube is operated between 15 and 140 psi.
