Abstract
Special slow mixers, to separate pulp from whole olives, have eccentrically mounted curved propeller blades (horizontal on vertical shafts), which rotate close to mixer walls, against which olives are crushed. The mixers are jacketed with water, pref. at 30 degrees C; and the pulp may be subsequently sepd. on a vibrating screen under water spray, homogenized in a known mixer, and purified and clarified in a centrifuge. Air contact is minimised, esp. in enclosed second high press. mixer, so that acidity is reduced. No pripr store removal is necessary, and an improved quality oil is produced at high efficiency.
