Abstract

Frozen foodstuffs are obtd. using a conveyor belt made from links of stainless steel. The small slabs of the foodstuff are placed on the belt opposite corridors delimited by guide bars. The slabs pass under a rotating brush with a peripheral speed greater than that of the belt to accelerate the slabs and forms them into continuous strips. The strips pass under a roller and are brought under a feed hopper for application of a sauce. The sauce-covered strips are carried by the belt into a cooling tunnel in which air approx. -30 degrees C is circulated through the belt; the sauce is frozen in about 15 mins. Three rollers break the frozen layer of sauce and return the strips to slabs with the original dimensions. These portions are taken by another conveyor to the packing station. Suitable for fish fillets, game, poultry, fruit and vegetable materials. The taste and aroma of the fresh foodstuff is preserved.
