Abstract

Pomegranate juice rich in vitamins, is obtd. from wild pomegranates, which are washed, sorted, cut into pieces and pressed to give a crude juice, which is submitted to first, pasteurisation with the addition of an enzyme prepn. and gelatin, and then decanted and filtered, after which correction is effected by the addition of water, sugar and kieselguhr, followed by a second filtration to give a natural juice of clear red colour. Used for drinks such as grenadine.
