Abstract

By maturing the dough in bread-making under controlled conditions of temp. and humidity, in order to delay the maturing process, night working can be eliminated. A conditioning unit for this purpose consists of a vertical case with an opening at the lower end covered by a grid. The base contains a water tank with a constant level float valve; water is drawn through a suction rose by an electric pump and forced through a row of spray nozzles at the top of the case. The upper frontal area of the latter forms an opening barred by a triple row of fine-meshed screens. Behind is an exchanger comprising the finned evaporator of a cooling system with the compressor and condenser outside the chamber. Fans in the case circulate the air through the appts. The units can easily be placed in the maturing chamber without any appreciable loss of space for the trolleys carrying the dough. The unit recycles the atmos. and renders it homogeneous at every point.
