Abstract
Device is intended for allowing the dough to stand for a definite time from the moment that a vol has been divided into pieces, each with a unit wt. corresp. to that of a loaf, until the operation of shaping the loaf is commenced. The device comprises a frame in the form of a right-angle, one part being vertical and fixed to the floor while the other part is horizontal at a height of about 6ft. from the floor. Receipients, made from felt attached to parallel bars, are attached to endless chains which follow a sinuous path around the frame. The recipients remain horizontal as they travel until they reach a zone where they are tipped automatically above a conveyor belt, this evacuating the matured dough to the forming post for the loaves.
