Abstract

Mould plate with perforated base is closed by a second plate slightly larger but also with perforated lid so that the cheese mass is held between and the whey can drip off without the cheese losing shape or flowing out with the departing whey. The base of the plate is grooved and these are drilled out to serve as whey removal outlets. The grooves are narrower towards the inside then the outside, possibly trapezoidal in section. Cheese loss is minimised, handling and reversal easier, forming can be automatic.
