Abstract

The cheese is mfd. in two moulds consisting of two identical cylindrical components. These have no bottoms, but their sides are curved over at the ends. Each half-mould has a flange. One half of the flange of one component consists of a tonque, the other half being a groove, both surfaces being granulated to prevent suction and being provided with a drain hole. After filling, the moulds are turned in the usual manner, keeping the two parts held together. To remove the cheese, the upper mould is taken off, the cheese is then turned over and the lower mould is removed. The cheese so produced has no sharp edges to become hard.
