Abstract

At least a fraction of the aromatic constituents are extracted into anhydrous liq. CO2. The soluble solids are then extracted into an aq. soln to which the liq. CO2 soln is added to enrich the extract, the CO2 then being distilled off. Addition takes place at an anhydrous CO2 gas pressure is not 5.1 atm esp. at a pressure equal to the SVP of anhydrous liq. CO2 at the temp. of the soln. Mixture may take place under liq/liq concns or with the aq. extract spray or freeze dried beforehand. Improved flavour and bouquet are obtd.
