Abstract

Device is intended for the cooking of poultry, meats, fish etc. on spits in a tunnel oven; after cooking, the prods. are discharged automatically and immediately packed in heat-formed plastic envelopes which are rigid and transparent. The spit system comprises symmetrical cages which carry retractable heating resistances; these can pass inside the poultry and ensure its internal sterilisation. After passing through the cooking tunnel the cages are opened in a lock chamber at the same temp. as that at the outlet of the oven. Sheets of PVC or polypropylene are used for packaging; they are sterilised in the lock chamber, stamped to shape and finally sealed by heat and air press. Multiple spit spindles can be used if a high rate of prodn. is required.
