Abstract

Pallet-loads of filled, yoghurt pots are cooled from the fermentation temp. (43 degrees C.) to about 10 degrees C., by movement continuously or intermittently through a cooling tunnel. Air vents are provided along both sides of the passageway to direct opposed blasts of air, at just above 0 degree C., through the stacked pots. Pref. the tunnel is situated inside the dairy cool room where the temp. is about 5 degrees C. Cooling is effected more rapidly and more uniformly than by air-blast cooling on one face only of the stack, when pots in the middle and at the back are poorly treated.
