Abstract

Yogurt, esp. the yogurt base to which fruits and other materials are added, is manufactured by a process in which milk is transformed, and coagulated, into yogurt; the mass of thickened, and coagulated yogurt is uniformly cooled, without modifying its position, in relatively thin layers for a very short time to a temp. 10 degrees C. The recipient in which the process is effected is rectangular in plan and semicircular in section. It is provided with channels, uniformly distributed on the periphery of the internal face and a number of hollow, vertical cooling plates. The low acidity and the high bacteriological purity ensure good storage properties and a creamy yogurt is obtained without the use of additives such as gelatine.
