Abstract

The cutter is intended for cutting up large cakes of curd into slices of equal size having the dimensions of the finished cheeses. It comprises a platen which is hinged at the rear to an upright of the frame and can be locked in the operating position. Four uprights are mounted at the corners of the platform on which the movable cutting equipment can slide. this equipment consists of a blade carrier with cross pieces to which the blades are welded in a criss-cross pattern. Stripping blades, which pass through the blade carriers, are also provided. A vertical jack controls the sliding of the cuttin equipment through the intermediary of its piston rod. The cakes of curd are brought under the blades on a sliding table; the blades are lowered so that the cake is cut into equal slices. The raising of the cutting equipment the actuates a lateral jack which ejects the cut cake and places a fresh one in position. The curd is then subjected to the conventional salting, maturing and packing processes.
