Abstract
Upon reaching supersaturation, seed crystals are introduced into the solution, after which the concentration is set in an initial phase at any values within metastable conditions or at values near to intermediate conditions. During transition from the initial to the high boiling phase, after reaching a certain agitator performance characterising the solution crystal content, the juice intake for the boiling apparatus is regulated by a precisely defined programme for the agitator performance, guaranteeing an intended crystal content increase during the high boiling phase.
