Abstract
Successive additions of a liq. reagent are made to a continuous flow of milk; the latter is also heated to give pH and temp. conditions necessary for the formation of casein, the device requiring only one pump to feed the milk into the flow pipe and to add the reagent. A mixt. is obtd. with stability of the pH value. Use of a single pump instead of two reqd. in prior art, facilitates the relative adjustments of the milk and reagent feeds. Constant level devices ensure a constant head for the pump which is of the gear type; shutters inside the pump can be adjusted to regulate the relative proportions of the two ingredients. The mixt. can be heated by steam fed to a nozzle in the flow pipe; the temp. can thus be adjusted to obtain the desired curd structure.
