La cuisson à l'air libre permet de donner aux aliments une saveur et, s'il y a lieu, un effet de croûte qui ne peuvent être obtenus par la cuisson à l'étouffé, mais il en résulte généralement des odeurs de cuisine qui se répandent d'une manière désagréable.
Pour remédier à cet inconvénient, on peut placer un couvercle sur la poêle ou casserole en position telle qu'il couvre le récipient seulement en partie et laisse un entre-bâillement pour donner de l'air, mais ce procédé est mal commode, le couvercle étant en déséquilibre, et en pratique peu efficace. On peut également utiliser un couvercle en tôle perforée, ce qui évite un tel déséqulibre, mais la nourriture ainsi cuite perd de sa saveur et il subsiste néanmoins des odeurs.
La présente invention a pour objet un couvercle pour récipients de cuisine, qui filtre très efficacement les odeurs et laisse aux aliments l'aspect et le goût qu'ils présentent lorsqu'ils sont cuits à l'air libre.
Le couvercle suivant l'invention est notamment caractérisé en ce qu'il se compose d'une ou de préférence plusieurs couches superposées en matière ayant la conformation d'un métal déployé à mailles fines, et d'une bordure périphérique qui ceinture et maintient lesdites couches.
Dans une forme d'exécution de l'invention, trois couches sont prévues et sont en aluminium déployé avec un espace de maille dont les dimensions sont de l'ordre de 5 mm X 10 mm.
Suivant une autre caractéristique, les diverses couches ont leurs mailles qui sont décalées les unes par rapport aux autres en position et/ou en orientation.
De préférence, le couvercle est muni d'un moyen de préhension, consistant par exemple en un bouton central.
Une forme d'exécution de l'invention est ci-après décrite, à titre d'exemple, en référence aux dessins annexés, dans lesquels : La figure 1 est une vue générale en perspective d'un couvercle filtrant les odeurs, posé sur un récipient de cuisine; La figure 2 est une vue en plan du couvercle; La figure 3 est une vue du couvercle en coupe suivant la ligne III-III de la figure 2; La figure 4 est une vue à très grande échelle d'une maille d'une des couches composant le couvercle.
Dans le mode de réalisation représenté, un couvercle 10 filtrant les odeurs pour récipients de cuisine 11, tels que poêle, casserole ou autres, se compose d'une ou de préférence plusieurs couches 12 (trois dans l'exemple représenté) superposées en matière ayant la conformation d'un métal déployé à mailles fines, par exemple en aluminium déployé.
Les dimensions de mailles ne doivent pas être trop petites afin d'éviter un effet de cuisson à l'étouffé. Lors de la cuisson d'un bifteck à la poêle par exemple, il serait en effet indésirable de donner un goût de bouilli à la viande. Les dimensions de mailles ne doivent pas non plus être trop grandes, car le couvercle ne filtrerait plus les odeurs aver. efficacité.
Les dimensions de mailles sont prévues d'autant plus grandes que le nombre de couches est luimême plus grand. On appréciera toutefois que le nombre de couches ne doit pas être choisi trop important pour une question de poids et de prix de revient. Les diverses couches ont leurs mailles qui sont décalées les unes par rapport aux autres en position et/ou en orientation, afin que les passager offerts par les couches successives soient disposée en chicane et permettent un filtrage approprié de* odeurs.
A la figure 4, on désigne par L la largeur de lanière, par e la petite dimension d'espace ,le maille, et par E la grande dimension d'espace de maille.
Avec trois couches 12 dont les mailles sont décalées en position et/ou en orientation, des résultats favorables ont été obtenus avec la largeur L comprise entre 0,12 mm et 3 mm, avec la dimension e comprise entre 0,4 mm et 7 mm, et avec la dimension E comprise entre 0,75 mm et 16 mm. Toutefois, avec les plus petites valeurs, on constate une tendance à la cuisson à l'étouffé, tandis qu'avec les plus grandes valeurs, l'efficacité du filtrage est moindre. Au cours de nombreux essais, les meilleurs résultats ont été obtenus avec trois couches 12 dont les mailles, décalées en position et en orientation, ont une largeur L de 1 mm, une dimension e de 5 mm, et une dimension E de 10 mm.
