Abstract

An aq. vegetable seed milk is claimed contg. sunflower seed proteins and lipids, but no solid matter from the hulls and having a pH not more than 8. The compsn. can be used as a substitute for cows milk. It is superior in taste and texture to other seed milks. The milk is prepd. by comminuting dehulled sunflower seeds, opt. with other seeds e.g. soybeans, peanuts, pine nuts, sesame etc., in the presence of water. The seeds are pref. soaked before grinding pref. at 70-140 deg. C, to remove mat'ls such as chlorogenic acid. After grinding, the pH is pref. adjusted to 6.5-7.5 before sepn. of solids. Higher pH values tend to cause extn. of off-flavour components, while if the pH is lower, the proportion of protein extd. is reduced and the prod. is watery. The milk may contain milk protein, polysaccharides, reducing agents, chelating agents, emulsifiers, buffers etc.
