Abstract

A method for processing and packing or packaging a food product, in particular fish, which comprises grinding or chopping up the product in such a manner that it takes on a fluid or semi-fluid consistency. To the ground product is added a coagulating substance which consists of sodium alginate. The product is sterilized through the effect of heat and is then packaged in sterile packs under aseptic conditions. In these packs, the product takes on a solid consistency as a result of the sodium alginate reacting chemically with calcium compounds which contain calcium ions strongly bound in complex form and which are added to the product or are present in it, in order to form calcium alginate.
