CONSISTE EN AÑADIR UN TENSOACTIVO IONICO A UN CULTIVO OBTENIDO CULTIVANDO UN MICROORGANISMO PRODUCTOR DE GLUCOSA-ISOMERASA O CELULAS HUMEDAS DEL MISMO, O UNA SUSPENSION ACUOSA DE ESTE, CON LO QUE SE AUTOLISA EL MATERIAL DE CULTIVO, A UNA TEMPERATURA ENTRE 30 C Y 70 C Y A UN PH ENTRE 5 Y 8. LA DISOLUCION ACUOSA ASI OBTENIDA, QUE CONTIENE GLUCOSA ISOMERASA SOLUBILIZADA Y ESTA EXENTA DE POLISACARIDO, SE PONE EN CONTACTO CON UN PORTADOR ADECUADO PARA ABSORBER SOBRE EL MISMO LA GLUCOSA ISOMERASA. ESTA ENZIMA TIENE APLICACION PARA LA OBTENCION DE FRUCTOSA A PARTIR DE GLUCOSA, EN LA FABRICACION DE JARABES.
