Abstract
Procedimiento para preparar una crema láctica batible de buena conservación, caracterizado porque comprende combinar una crema láctica, que contiene al menos el 28% de lípidos, con 0,2 a 0,6% en peso de una composición de celulosa microcristalina y carboximetilcelulosa sódica, con una proporción relativa entre ambas entre 70/30 y 92/08, en estado sólido u opcionalmente previa su dispersión independiente en agua o en una fracción de la leche descremada y someter el producto a una acción térmica durante breve tiempo a temperatura elevada, de preferencia 150ºC, enfriando finalmente bajo vacío y esterilizando bajo presión.
