Abstract

Procedimiento de fabricación de chocolate con leche, a partir de una composición a base de leche y azúcar, seca bajo presión reducida con formación de un producto género "crumb" caracterizado porque en su realización, la citada composición a base de azúcar y leche, eventualmente en combinación con licor de cacao, y que constituye un producto de género "crumb" con 2 a 3% de agua, se somete a un tratamiento rápido de compresión bajo una presión de por lo menos 100 kg/cm2, preferentemente entre 600 y 900 kg/cm2, simultaneando el citado tratamiento de compresión con un tratamiento técnico regulado, a temperatura comprendida entre 70º y 95ºC, moliendo el producto resultante y siguiéndose las etapas de transformación usuales según técnicas conocidas.
