Procedure for the preparation of amino acids of the general formula **(See formula)** wherein R1 represents hydrogen, hydroxy, lower alkoxy, lower alkyl, halogen, or amino; n represents an integer valued from 1 to 3; R2 represents hydrogen or lower alkyl; R3 represents hydroxide, lower alkoxy or mono- or di- (lower alkyl) -substituted amino; R4 represents hydrogen, lower alkyl, lower alkanoyl, or aroyl; R5 represents hydrogen or lower alkyl; and one of the substituents R6 and R7 represents hydroxyl while the other represents alkanoyl with at least 2 carbon atoms, preferably in L or D, L form, and of salts of these compounds, characterized by reacting a compound of the general formula **(See formula)** where R1 to R5 and n have the same meaning as before and one of the substituents R6'and R7 represents hydrogen while the other represents lower alkanoyloxy with at least 2 carbon atoms.
