Abstract

Ascorbic acid and salts and esters thereof are stabilized by forming a coating by polymerizing a siloxane on individual particles of the ascorbic acid or ascorbic acid derivative. A solution of a siloxane in a volatile solvent is sprayed on the particles in a fluidized bed or the solution is mixed with the particles and then they are dried in a fluidized bed, the siloxane polymerizing as the particles are dried. Examples are given.
