Abstract
Proceso de producción de un fermento de lactato que contiene nisina y que comprende las etapas consecutivas de: a) proporcionar un medio nutritivo que comprende una solución de un sustrato fermentable y una fuente de nitrógeno en un medio acuoso; b) inocular dicho medio nutritivo con bacterias ácido lácticas productoras de nisina; e c) incubar el medio nutritivo inoculado bajo condiciones favorables para el crecimiento y/o actividad metabólica de dichas bacterias ácido lácticas durante un periodo suficiente para producir un caldo de fermentación que contenga al menos 20 g/l de equivalentes de lactato y/o al menos 1000 IU/ml de actividad equivalente de nisina, durante dicho periodo el pH del caldo de fermentación se controla añadiendo uno o más agentes alcalinizantes que comprenden sales alcalinas de sodio y de calcio, donde la proporción Na:Ca (p/p) de las sales añadidas está en el rango de 1/6 - 1/1, preferiblemente 1/6 - ½ .
