Abstract

Un método de concentrar zumo de frutas, que comprende calentar zumo bruto para vaporizar una primera fracción del mismo y producir un zumo parcialmente concentrado, rectificar dicha primera fracción para separar una esencia de la misma y poner los vapores de dicha primera fracción en relación de permutación térmica con dicho zumo parcialmente concentrado para evaporar agua de él y producir una solución de zumo concentrada.
