Abstract

Procedimiento para preparar un producto alimenticio que incluye bacterias de ácido láctico y al que se ha añadido un aroma agradable, que comprende fermentar leche entera o/y leche desnatada por inoculación de levaduras y bacterias de ácido láctico, añadir mucílago y/o preparación de fruta a la leche fermentada, y controlar la mezcla obtenida a un P.H. de 5,0-5,5 con sustancias de acción antagonista, pasteurizar por calor y enfriar dicha mezcla, la cual es preparada mezclando de nuevo leche entera y/o leche desnatada, y hacer una fermentación de ácido láctico por inoculación de bacterias de ácido láctico en la mezcla.
