Abstract

Método de tratamiento del vino para eliminación de moléculas que afectan negativamente a su sabor y/u olor. Aplicable a vinos de crianza, bien alojados en barricas de madera o bien ya embotellados, consiste en trasvasar el vino a un depósito aséptico, preferentemente de acero inoxidable, en cuyo seno se introduce un plástico alimentario de tipo polietileno de baja densidad, en forma de láminas o tiras, en orden a que este material plástico absorba las moléculas que confieren al vino mal sabor y/o mal olor, tales como los cloroanisoles o los clorofenoles generados por acciones insecticidas o bactericidas en la propia madera de la barrica o en el ambiente que rodea a las botellas y que acceden al interior de las mismas a través de su tapón de corcho, manteniéndose el vino en contacto con dicho plástico alimentario durante un tiempo del orden de siete días, tras lo que se procede a su definitivo embotellado y etiquetado para su expedición.
