COMPRENDE LAS SIGUIENTES ETAPAS: A) SE TOMA UNA MUESTRA DE DICHO ALIMENTO AL QUE SE AÑADE UNA SOLUCION TAMPON DE FUERZA IONICA Y DE PH APROPIADOS PARA OBTENER, POR UNA PARTE, UN PRECIPITADO DE PROTEINAS DESNATURALIZADAS POR EL TRATAMIENTO TERMICO Y, POR OTRA PARTE, UN SUPERNADANTE TRANSPARENTE QUE CONTIENE PROTEINAS TODAVIA SOLUBLES; B) SE DOSIFICA EL TRIPTOFANO PRESENTE EN EL SUPERNADANTE Y C) SE DOSIFICAN LOS SUBPRODUCTOS FLUORESCENTES OBTENIDOS EN LA REACCION AVANZADA DE MAILLARD PRESENTES EN EL SUPERNADANTE. LA INVENCION ES UTIL EN PROCEDIMIENTOS DE TRATAMIENTO TERMICO DE ALIMENTOS PROTEICOS.
