Abstract

Procedimiento para aumentar el contenido de azúcares en frutas y hortalizas, especialmente uvas. El procedimiento comprende recubrir con, al menos, un colorante, al menos, parcialmente la superficie externa de dicho vegetal, en la propia planta. El vegetal es preferentemente la uva. El colorante es cualquier colorante aprobado por las autoridades sanitarias para uso alimentario que tenga un color de oscuro a negro. Aplicación en el sector agrícola para la obtención de frutos y hortalizas, así como derivados de los mismos, con un mayor contenido en azúcar. La aplicación especialmente preferida se encuentra en el sector vitivinícola, porque permite la obtención de mostos más ricos en azúcar que los que se obtendrían sin el tratamiento de la invención, cuya fermentación proporciona vinos con un grado alcohólico más elevado y de mejor calidad.
