Abstract

Se trata de un sistema de refrigeración / congelación rápido compuesto por una instalación frigorífica con una disposición particular de las baterías frigoríficas y de los ventiladores, aspirándose el aire de modo continuo, uniforme y a gran velocidad, haciéndolo pasar a través del producto que forma un túnel constituido por los envases que lo contienen, el suelo del recinto frigorífico y un toldo dispuesto sobre ellos, de forma que el aire frío disipa calor del producto, atravesando la batería frigorífica donde lo cede. Este ciclo se repite continuamente hasta conseguir la temperatura deseada en el centro térmico del producto. Las baterías frigoríficas se sitúan en la parte superior del tabique que separa la zona de enfriamiento del aire y la del producto, mientras que los ventiladores se sitúan en la parte inferior aspirando el aire directamente del "Plenum" formado por el producto o sus envases, el suelo y la lona.
