EL PASO DE FERMENTACION REDUCE LA CANTIDAD DE AZUCARES REDUCTORES SOBRE LA SUPERFICIE DEL VEGETAL DE FORMA QUE NO SE DORA LA SUPERFICIE DURANTE LA COCCION. ESTO TAMBIEN PERMITE EL USO DE VEGETALES TALES COMO ZANAHORIAS QUE CONTIENEN NIVELES RELATIVAMENTE ALTOS DE AZUCARES REDUCTORES, POR EJEMPLO UN 1.5% EN PESO.
