EL CARACTER AEROBIO DE LOS MICROORGANISMOS EXIGE UN APORTE CONSTANTE DE OXIGENO AL SISTEMA, PROVOCANDO UNA IMPORTANTE PERDIDA DE COMPONENTES VOLATILES DEL MEDIO, UN MENOR RENDIMIENTO Y CALIDAD DEL PRODUCTO. PARA EVITARLO, SE HA MODIFICADO UN FERMENTADOR TIPICO DE CULTIVO SUMERGIDO EQUIPANDOLO CON UN SISTEMA DE RECIRCULACION DE GASES. DICHO SISTEMA EVITA EL ESCAPE DE LOS GASES MEJORANDO SIGNIFICATIVAMENTE LA EFICACIA DEL PROCESO. EL CARACTER AEROBIO DE LA BROMASA OBLIGA A INYECTAR OXIGENO AL MEDIO EN CUANTIA DEPENDIENTE DE LA FASE DEL PROCESO. LA INYECCION SE CONTROLA MEDIANTE UN SISTEMA AUTOMATICO DOTADO DE SENSORES DE OXIGENO DISUELTO. LAS CONDICIONES DE OPERACION (PH, TEMPERATURA, REGIMEN DE CARGA Y DESCARGA, ETC) SON TAMBIEN CONTROLADAS DENTRO DE LOS RANGOS OPTIMOS MEDIANTE UN SISTEMA DE CONTROL AUTOMATIZADO.THE PRESENT INVENTION IS REFERRED TO A CLOSED FERMENTER FOR THE ACETIFICATION OF ALCOHOLIC MEDIA WITH AUTOMATIC CONTROL OF OPERATING CONDITIONS. THE AEROBIC CHARACTER OF MICROORGANISMS DEMANDS A CONSTANT CONTRIBUTION OF OXYGEN TO THE SYSTEM, CAUSING AN IMPORTANT LOSS OF VOLATILE COMPONENTS OF THE ENVIRONMENT, LOWER PERFORMANCE AND QUALITY OF THE PRODUCT. TO AVOID IT, A TYPICAL SUBMERGED CROP FERMENTER HAS BEEN MODIFIED BY EQUIPPING IT WITH A GAS RECIRCULATION SYSTEM. SUCH A SYSTEM PREVENTS THE LEAKAGE OF GASES BY SIGNIFICANTLY IMPROVING THE EFFECTIVENESS OF THE PROCESS. THE AEROBIC CHARACTER OF THE BROMASS FORCES TO INJECT OXYGEN TO THE ENVIRONMENT AS A DEPENDENT OF THE PHASE OF THE PROCESS. THE INJECTION IS CONTROLLED THROUGH AN AUTOMATIC SYSTEM EQUIPPED WITH DISSOLVED OXYGEN SENSORS.
