Abstract

This invention relates to a sealed fermenter for the vinegarization of alcoholic media with automatic control of the operating conditions. The aerobic nature of the micro-organisms requires a constant input of oxygen to the system which causes a significant loss of volatile components from the medium, lower efficiency and lower product quality. To avoid this a typical submerged- culture fermenter has been modified by equipping it with a gas recycling system. This system avoids escape of the gases, significantly improving the efficiency of the process. The aerobic nature of the biomass makes it necessary to inject oxygen into the medium in a quantity which depends on the stage in the process. Injection is controlled by an automatic system equipped with dissolved oxygen sensors. The operating conditions (pH, temperature, filling and discharge conditions, etc.) are also controlled within optimum ranges by means of an automated control system.
