Abstract

The sardine or similar species passes to troughs 1 with brine or seawater, transversely accessing a belt with three scoops 3, 4, 5, oriented and stationary with the head, body and tail resting on the respective portions of the triple scoop. The heads and tails are removed by cutting with individual colateral cutters, the central belt of scoops 4 advancing with the bodies for the latter's subsequent processing. After the phase of washing and removing the guts by vacuum, the bodies are diverted to a parallel lateral belt 14, cutting of the ventral part of the sardine taking place by means of an intermediate horizontal cutter 17. This parallel belt 14 passes through the cooker, the scoops having vents 32 for the penetration of vapour for the dehydration of the trunk by approximately 22%. The end vertebrae of the spine project and are thus easily picked up for removal. During extraction of the spine and subsequent removal of the skin, the bodies are centred and held lightly by means of a top caterpillar track 30 with scoops 31 in the form of a half moon (crescent) in order gradually to press on the trunk, from tail to chest, the skin remaining between the scoops 31, 15 as the clean trunk is expelled sideways.
