Abstract
1483965 Filleting fish NORDISCHER MASCHINENBAU RUD BAADER 5 Feb 1976 04529/76 Heading A2U A fish-filleting machine comprises a pair of belly filleting knives 12 to make incisions in the belly of each fish, a pair of bone knives 13 for separating lateral vertebral processes from the backbone without cutting off the flank fillets, a pair of rib knives 15 arranged after the bone knives for cutting off the separated lateral vertebral processes and a pair of back knives 16 for cutting off the flank fillets. In the embodiment shown the fish is supported by guides 21, 22, 23 and 25 and conveyed by conveyor belts 41 and 42-Fig. 3 or a saddle (43-Fig. 4-not shown). Knife 11 slits open the belly cavity; guides 24 control the depth of cut of the knives 12; bone knives 13 are raised to cut as the belly of the fish passes an automatically lower as the tail passes; guides 23 are angularly deflectable and guide 25 is adjustable to limit the depth of cut of knives 16.
