Claims (11)
- Appareil de cuisson (1), en particulier appareil de cuisson industriel,- avec un boîtier (2),-- dans lequel est disposé un compartiment de cuisson (3), et-- qui est pourvu d'une évacuation de boîtier (4),- avec un condensateur, qui est relié au compartiment de cuisson (3),- avec un dispositif d'amenée d'eau de refroidissement (10), et- avec une évacuation d'appareil (9),- dans lequel le condensateur (5) présente un système à chambres multiples, et- dans lequel le dispositif d'amenée d'eau de refroidissement (10) présente au moins une conduite d'amenée (11),- dans lequel le condensateur (5) présente en tant que système à chambres multiples un système à trois chambres avec les composants suivants :-- une première chambre (6), qui est en liaison fluidique avec le compartiment de cuisson (3) par l'intermédiaire de l'évacuation de boîtier (4) et qui présente un premier réservoir d'eau (W1),-- une deuxième chambre (7), qui se raccorde à la première chambre (6) et présente un deuxième réservoir d'eau (W2), et-- une troisième chambre (8), qui se raccorde à la deuxième chambre (7), présente un troisième réservoir d'eau (W3), et qui est reliée à l'évacuation d'appareil (9), dont la position dans la troisième chambre (8) définit le niveau (N3) du réservoir d'eau (W3),caractérisé en ce que
la conduite d'amenée (11) débouche dans la chambre (8), qui est pourvue de l'évacuation d'appareil (9), et
que la conduite d'amenée (11) est orientée sur une zone d'embouchure (12) de l'évacuation d'appareil (9), et- que l'évacuation d'appareil (9) est pourvue d'un capteur de température (14). - Appareil de cuisson selon la revendication 1, caractérisé en ce qu'un dispositif de mélange, en particulier sous forme d'une plaque déflectrice (13), est disposé dans l'évacuation d'appareil (9).
- Appareil de cuisson selon la revendication 2, caractérisé en ce que le capteur de température (14) est disposé sur le dispositif de mélange, en particulier la plaque déflectrice (13).
- Appareil de cuisson selon l'une quelconque des revendications 1 à 3, caractérisé en ce que la première chambre (6) est pourvue d'un capteur de température (15).
- Appareil de cuisson selon l'une quelconque des revendications 1 à 4, caractérisé en ce que la troisième chambre (8) est pourvue d'un capteur de température (16).
- Appareil de cuisson selon l'une quelconque des revendications 1 à 5, caractérisé en ce que la conduite d'amenée (11) est pourvue d'un capteur de température (17).
- Appareil de cuisson selon l'une quelconque des revendications 1 à 6, caractérisé en ce que la conduite d'amenée (11) est pourvue d'un organe d'arrêt (18) pouvant être ouvert et fermé.
- Appareil de cuisson selon l'une quelconque des revendications 1 à 7, caractérisé en ce que l'amenée d'eau froide peut être commandée ou régulée par l'intermédiaire d'au moins un des capteurs de température (14, 15, 16, 17, 32).
- Appareil de cuisson selon l'une quelconque des revendications 1 à 8, caractérisé en ce que la troisième chambre (8) est isolée thermiquement.
- Appareil de cuisson selon l'une quelconque des revendications 1 à 9, caractérisé en ce qu'une tubulure de liaison (38) entre la chambre (8), qui est reliée à l'évacuation d'appareil (9), et la chambre (7), qui est disposée, vue dans la direction d'écoulement, avant la chambre (8) avec l'évacuation d'appareil (9), est isolée thermiquement.
