La présente invention concerne le domaine des réductions de composés possédant une fonction carbonyie hydrosolubles en milieu aqueux. Depuis quelques années, le milieu industriel de la chimie est en pleine mutation.
Le développement de procédés écoresponsables est devenu une priorité. L'industrie chimique doit donc réussir à concilier progrès économiques, durabilité et éco- compatibilité.
Un des inconvénients majeurs de la chimie organique est l'utilisation massive de solvants organiques, générant des quantités de déchets considérables. 80 à 90% des déchets générés par l'industrie pharmaceutique proviennent du solvant utilisé.
Par ailleurs, ils sont souvent nocifs et volatils. 35% des VOCs libérés dans l'atmosphère sont des solvants et l'utilisation de solvant est responsable de la moitié des émissions de gaz à effet de serre. Ainsi, l'un des défis majeurs de la chimie moderne est la limitation de l'utilisation du solvant. Il s'agit du 5eme principe de la chimie verte.
Traditionnellement, l'eau est rarement utilisée en chimie de synthèse. Elle solubilise mal les produits organiques et réagit avec certains groupes fonctionnels.
En revanche, l'eau possède des atouts : elle est non toxique, disponible, limite les rejets de polluants organiques et présente des propriétés physico-chimiques intéressantes (constante diélectrique, densité d'énergie de cohésion, par exemple).
La mise en oeuvre de procédés de synthèse dans l'eau est évidemment plus ou moins complexe en fonction du mécanisme réactionnel mis en jeu. Son aspect protique et son acidité sont ainsi un obstacle à certaines réactions telles que la réduction. Bons nombres de réducteurs ne sont pas utilisables en milieu aqueux (hydrure, alanes, boranes, métaux). Les réactions d'hydrogénation utilisant des ligands hydrosolubles est encore marginale. Elle se heurte également à l'utilisation de pressions élevées en dihydrogène, qui constituent un risque industriel.
Les inventeurs de la présente invention ont mis en évidence qu'il est possible de réduire dans des conditions douces et en milieu aqueux des composés organiques hydrosolubles, tels que des glucides et des dérivés de glucides avec le dithionite de sodium.
Le dithionite de sodium est un réducteur présentant de nombreux avantages : c'est un réducteur puissant en miiieu aqueux (à pH=7, E°=-0.66V; pH=10,E°=-!13V), peu coûteux et non toxique. I! est connu pour sa capacité à réduire des aldéhydes et des cétones en milieu organique par transfert de phase. Dans le cadre de la présente invention, le dithionite de sodium est utilisé directement en miiieu aqueux pour réduire des glucides ou analogues glucidiques tels que des C-glycosides fragiles et hydrosolubîes. La fonction carbonyle du glucide ou de l'analogue glucidique peut être endocyclique, exocyclique ou sur le carbone anomère du glucide sous la forme d'un hémiacétal. Les inventeurs ont notamment mis en évidence que le dithionite de sodium permet la réduction de glucides fragiles et/ou présentant un intérêt industriel.
Au sens de la présente invention, on entend par « miiieu aqueux » un milieu constitué essentiellement, en tant que solvant, d'eau, et éventuellement d'un solvant organique miscible à l'eau, tel qu'un alcool, notamment l'éthanol, le propanol tel que le n-propanol ou l'isopropanol et le butanol te! que le n-butanol.
La présente invention concerne également l'utilisation du dithionite de sodium, avantageusement en présence d'un alcooi, notamment d'éthanol, pour la réduction d'au moins une fonction aldéhyde, hémiacétal ou cétone d'un composé de formule (A) en i'absence d'un solvant organique non-miscible à l'eau et en l'absence d'un agent de transfert de phase :

La présente invention concerne donc l'utilisation du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanol,, pour la réduction d'au moins une fonction aldéhyde ou cétone de composés du type glucide, C- glycoside, oligosaccharide, avantageusement un disaccharide , polysaccharide, ou d'analogues de glucide dans lequel l'oxygène intracyclique est remplacé par un atome de carbone ou dans iequel l'oxygène intracyclique et l'oxygène exocyciique sont
remplacés par un atome de carbone, hydroso!uble en l'absence d'un solvant organique non-miscible à l'eau et en l'absence d'un agent de transfert de phase, avantageusement en présence d'un alcool, notamment d'éthanoi,.
Au sens de la présente invention, on entend par « glucide » un composé de type aidose, cétose ou un dérivé d'un monosaccharide résultant d'une modification telle qu'une oxydation, une désoxygénation, une substitution, une alkylation ou une acylation d'un ou plusieurs groupements hydroxyle.
Au sens de la présente invention, on entend par « analogue de glucide dans lequel l'oxygène intracyclique est remplacé par un atome de carbone ou dans lequel l'oxygène intracyclique et l'oxygène exocyciique sont remplacés par un atome de carbone, » un composé dans lequel est présent un cycle à 5 ou 6 chaînons substitué par un ou plusieurs groupements hydroxyles.
Au sens de la présente invention on entend par « C-glycoside » un composé dans lequel le carbone qui est supposé être le carbone anomérique du glucide est connecté à un atome de carbone exocyciique à la place du groupement OH du sucre correspondant.
Au sens de la présente invention, on entend par « oligosaccharide, avantageusement un disaccharide ou un polysaccharide », un composé de type aidose cétose ou un dérivé d'un monosaccharide résultant d'une modification telle qu'une oxydation, une désoxygénation, une substitution, une alkylation ou une acylation d'un ou plusieurs groupements hydroxyle, dans lequel au moins un desdits groupes hydroxyle est lié à au moins un autre glucide par une liaison glycosidique.Au sens de la présente invention, on entend par « aryle » un cycle insaturé, mono ou polycyclique aromatique de 5 à 14 chaînons. Les composés de formule (A) ou (I) selon la présente invention peuvent être tout épimère du composé de formule (A) ou (!) correspondant ou un mélange de plusieurs épimères. En d'autres termes, les groupements R1 , Z et Y peuvent être en avant ou en arrière du pian moyen de l'hétérocycie ou du carbocycle à 5 ou 6 chaînons.
La réduction de la fonction aldéhyde masquée sous forme hémiacétalique présente dans les glucides permet un accès efficace et simple aux polyols utilisés comme édulcorants. Des exemples de structures réductibles par Na2S204 sont les monosaccharides ou les disaccharides réducteurs tels que le xylose, l'érythrose, l'isomaftose, le maltose, le glucose, le mannose et le lactose.
Dans un mode de réalisation, la présente invention concerne donc également l'utilisation du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanol, pour la réduction d'un glucide en polyol, en particulier les polyols utilisés dans l'industrie alimentaire en tant qu'éduicorants. La présente invention concerne donc en particulier l'utilisation du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanol, pour la réduction :
• du xylose en xylitoi,
• de l'érythrose en érythritoi,
• de l'isomaitose en isomalt,
· de l'érythrose en érythritoi,
• du maltose en maltitol,
• du mannose en mannitol,
• du glucose en sorbitoi,
• du lactose en lactitoi.
La réduction d'au moins une fonction aldéhyde, hémiacétal et/ou cétone est réalisée avec 1 à 15 moles, avantageusement de 4 à 10 moies, notamment environ 5 moles de dithionite de sodium par mole de fonction aldéhyde, hémiacétal et/ou cétone à réduire.
Dans un mode de réalisation avantageux, l'utilisation d'un antioxydant permet d'éviter l'utilisation d'un excès de dithionite de sodium.
En raison du potentiel d'oxydo-réduction du dithionite de sodium, celui-ci est capable de réduire l'eau présente dans le milieu réactionnel. Avantageusement, la réaction est mise en œuvre en présence d'un agent capable de limiter cette réduction.
Les Inventeurs ont mis en évidence un effet avantageux d'un alcool, qui ralentit la réduction de l'eau par le dithionite de sodium et permet de réduire ia quantité de dithionite de sodium nécessaire pour effectuer la réduction de la même quantité du composé de formule (A) à réduire. L'alcool peut notamment être choisi parmi le méthanoS, l'éthanol, ie /7-propanol,
/Yso-propanol, le ieri-butanol. il s'agit de préférence de l'éthanol.
La présente invention concerne donc également l'utilisation du dithionite de sodium pour la réduction d'au moins une fonction aldéhyde, hémiacétal et/ou cétone d'un composé de formule (A) ou de formule (I) hydrosoiuble en l'absence d'un solvant organique non-miscible à l'eau et en l'absence d'un agent de transfert de phase de tel que défini ci-dessus, en présence d'un alcool, notamment en présence d'éthanol.
L'utilisation d'un alcool, notamment de l'éthanol permet également l'addition du dithionite de sodium dans le milieu réactionnei sans qu'il soit nécessaire de procéder à plusieurs ajouts. La présente invention concerne donc également l'utilisation du dithionite de sodium pour la réduction d'au moins une fonction aldéhyde, hémiacétal et/ou cétone d'un composé de formule (A) ou de formule (I) tel que défini ci-dessus hydrosoiuble en l'absence d'un solvant organique non-miscible à l'eau et en l'absence d'un agent de transfert de phase, en présence d'un alcool, notamment d'éthanol, et dans laquelle le dithionite de sodium n'est pas ajouté en portions. La proportion d'éthanol est comprise entre 0,5 et 2 volumes d'éthanol pour 1 volume d'eau, avantageusement de 1 à 2 volumes d'éthanol pour 1 volume d'eau, notamment de 1 , 4 à 1 ,9 volumes d'éthanol
pour 1 volume d'eau. Dans un mode de réalisation, la proportion d'éthanol est de 1 ,5 voiume d'éthanol pour 1 volume d'eau. Dans un autre mode de réalisation, la proportion d'éthanol est de 1 ,88 volume d'éthanol pour 1 volume d'eau.
Lorsque la réaction est mise en œuvre en présence d'un alcool, notamment d'éthanol, tel que décrit ci-dessus, il est possible de réduire la quantité de dithionite de sodium utilisée pour la réduction d'au moins une fonction aldéhyde, hémiacétal et/ou cétone d'un composé de formule (A) tel que défini ci-dessus. Avantageusement, ia quantité de dithionite de sodium varie de 1 à 2 équivalents de dithionite de sodium, notamment de 1 ,1 à 1 ,5 équivalents de dithionite de sodium. De préférence, on utilise environ 1 ,2 équivalents de dithionite de sodium.
La réduction d'au moins une fonction aldéhyde, hémiacétai et/ou cétone est réalisée en présence d'une base, soluble ou non dans l'eau. L'utilisation d'une base insoluble dans l'eau permet notamment de l'éliminer de manière plus aisée à l'issue de la réaction, par exemple par filtration, de limiter les traitements de neutralisation et de limiter !a corrosion des réacteurs.
Avantageusement, ladite base soluble est choisie parmi les hydroxydes teis que NaOH et KOH, les hydrogénocarbonates tels que NaHC03 et KHC03 et les carbonates tels que Na2C03 et K2C03. La base non-soluble dans l'eau peut également être choisie parmi le carbonate de calcium, l'hydrotalcite et les bases calciques biosourcées issues de la calcination de plantes, d'algues caicifiantes ou de coquilles de mollusques décrites dans la demande WO 2015/036714, avantageusement les bases calciques biosourcées traitées à 900°C ou à une température inférieure à 500°C selon la méthode décrite dans la demande WO 2015/036714. Plus avantageusement, la base est choisie parmi les hydrogénocarbonates ou les bases calciques biosourcées. De préférence, la base est Na2C03. Avantageusement, le pH de la solution aqueuse dans laquelle est réalisée la réduction est compris entre 7 et 14, avantageusement entre 8 et 12.
Avantageusement, la base est présente en excès par rapport au dithionite de sodium, avantageusement dans un rapport compris entre 50 : 1 et 1 :1 , notamment de 10 : 1 à 1 : 1, en particulier de 2 : 1 , de préférence de 1 ,2 : 1.
Lorsque la base est Na2C03, elle est employée dans un rapport de 1 ,2 à 1,5 : 1 par rapport au dithionite de sodium, de préférence environ 1 ,4 : 1.
La présente invention concerne donc également l'utilisation de 1 à 2 équivalents, notamment de 1,1 à 1 ,5 équivalents de dithionite de sodium pour la réduction d'au
moins une fonction aldéhyde, hémiacétal et/ou cétone d'un composé de formule (A) ou (I) hydrosoluble en l'absence d'un solvant organique non-miscible à l'eau et en l'absence d'un agent de transfert de phase de formule (I) tel que défini ci-dessus, en présence de 0,5 à 2 volumes d'éthanoi pour 1 volume d'eau, avantageusement de 1 à 2 volumes d'éthanoi pour 1 volume d'eau, notamment de 1,4 à 1 ,9 volumes d'éthanoi pour 1 volume d'eau, en présence de Na2C03, dans un rapport de 1,2 à 1 ,5 : 1, de préférence environ 1,4 : 1 par rapport au dithionite de sodium.
De manière avantageuse, la base et le dithionite de sodium sont ajoutés simultanément à une solution aqueuse du composé de formule (A) ou (I). A titre d'exemples, la base et le dithionite de sodium peuvent être mélangés séparément du composé de formule (A) ou (I) et ajoutés audit composé en solution dans le milieu aqueux.
Avantageusement, ia base et le dithionite de sodium sont ajoutés très lentement à la solution aqueuse du composé de formule (A) ou (l), notamment sur une période comprise entre 1 heure et 24 heures, avantageusement entre 2 heures et 6 heures, notamment sur une durée de 4 heures.
La base et le dithionite de sodium sont avantageusement ajoutés par portions au composé de formule (A) ou (I), notamment à des intervalles de 10 minutes à 3 heures, avantageusement de 30 minutes à 2 heures, notamment d'1 heure ou de façon continue pendant la durée de la réaction.
Par « ajoutés par portions », on entend au sens de la présente invention que la quantité totale de dithionite de sodium et de base est divisée en parts égales ou non égales, chacune de ces parts étant ajoutée à la solution du composé de formule (A) ou (!) à intervalles réguliers ou non réguliers. La réduction d'au moins une fonction aldéhyde, hémiacétal ou cétone est réalisée à une température comprise entre 20 et 110 °C, avantageusement entre 40 et 100 °C, notamment à une température de 90 °C.

La proportion d'éthanol est comprise entre 0,5 et 2 volumes d'éthanol pour 1 volume d'eau, avantageusement de 1 à 2 volumes d'éthanol pour 1 volume d'eau, notamment de 1 , 4 à 1 ,9 volumes d'éthanol pour 1 volume d'eau. Dans un mode de réalisation, la proportion d'éthanol est de 1 ,5 volume d'éthanol pour 1 volume d'eau. Dans un autre mode de réalisation, la proportion d'éthanol est de 1 ,88 volume d'éthanol pour 1 volume d'eau.
Lorsque la réaction est mise en œuvre en présence d'un alcool, notamment d'éthanol, tel que décrit ci-dessus, il est possible de réduire la quantité de dithionite de sodium utilisée pour la réduction d'au moins une fonction aldéhyde, hémiacétal et/ou cétone d'un composé de formule (!) et la préparation d'un composé de formule (IV) ou (V). Avantageusement, la quantité de dithionite de sodium varie de 1 à 2 équivalents de dithionite de sodium, notamment de 1,1 à 1 ,5 équivalents de dithionite de sodium. De préférence, on utilise environ 1 ,2 équivalents de dithionite de sodium. Dans ce mode de réalisation, le dithionite de sodium peut être ajouté en une seule fois au début de la réaction et il n'est donc pas nécessaire de l'ajouter par portions.
La réduction d'au moins une fonction aldéhyde, hémiacétal et/ou cétone est réalisée en présence d'une base, soluble ou non dans l'eau. L'utilisation d'une base insoluble dans l'eau permet notamment de l'éliminer de manière plus aisée à l'issue de la réaction, par exemple par filtration, de limiter les traitements de neutralisation et de limiter la corrosion des réacteurs.
Avantageusement, dans ies procédés de préparation des composés de formule (IV) et (V) tels que décrits ci-dessus, ladite base soluble est choisie parmi ies hydroxydes tels que NaOH et KOH, les hydrogénocarbonates tels que NaHC03 et KHC03 et les carbonates tels que Na2C03 et K2C03. La base non-solubie dans l'eau peut également être choisie parmi le carbonate de calcium, î'hydrotalcite et les bases caiciques biosourcées issues de ia calcination de plantes, d'algues calcifiantes ou de coquilles de mollusques décrites dans la demande WO 2015/036714, avantageusement les bases caiciques biosourcées traitées à 900°C ou à une température inférieure à 500°C selon la méthode décrite dans la demande WO 2015/036714. Plus avantageusement, ia base est choisie parmi les hydrogénocarbonates ou ies bases caiciques biosourcées. De préférence, la base est Na2C03. Avantageusement, le pH de la solution aqueuse dans laquelle est réalisée la réduction est compris entre 7 et 14, avantageusement entre 8 et 12.
Avantageusement, la base est présente en excès par rapport au dithionite de sodium, avantageusement dans un rapport compris entre 50 : 1 et 1 :1, notamment de 10 : 1 à 1 : 1 , en particulier de 2 : 1 , de préférence de 1 ,2 : 1.
Lorsque la base est Na2C03l elle est employée dans un rapport de 1,2 à 1 ,5 : 1 par rapport au dithionite de sodium, de préférence environ 1 ,4 : 1.
La présente invention concerne donc également un procédé te! que décrit ci- dessus dans lequel de 1 à 2 équivalents, notamment de 1 ,1 à 1 ,5 équivalents de dithionite de sodium sont employés pour la réduction d'au moins une fonction aldéhyde, hémiacétal et/ou cétone d'un composé de formule (i) tel que défini ci-dessus hydrosoiuble en l'absence d'un solvant organique non-miscible à l'eau et en l'absence d'un agent de transfert de phase, en présence de 0,5 à 2 volumes d'éthano! pour 1 volume d'eau, avantageusement de 1 à 2 volumes d'éthano! pour 1 volume d'eau, notamment de 1 ,4 à 1 ,9 volumes d'éthanol pour 1 volume d'eau, en présence de Na2C03, dans un rapport de 1 ,2 à 1,5 : 1 , de préférence environ 1 ,4 : 1 par rapport au dithionite de sodium..
De manière avantageuse, dans ies procédés de préparation des composés de formule (IV) et (V) la base et le dithionite de sodium sont ajoutés simultanément à une solution aqueuse du composé de formule (!) à réduire. A titre d'exemples, Sa base et le dithionite de sodium peuvent être mélangés séparément du glucide, de l'oligosaccharide ou du polysaccharide et ajoutés au glucide, à l'oligosaccharide ou au polysaccharide en solution dans le milieu aqueux.
Dans ies procédés de préparation des composés de formule (IV) et (V) dans lesquels l'éthano! n'est pas présent dans le milieu réactionnel, la base et le dithionite de sodium sont avantageusement ajoutés par portions au glucide, au C-glycoside, à l'oligosaccharide, au polysaccharide ou à l'analogue de glucide dans lequel l'oxygène intracyclique est remplacé par un groupement CH2 à réduire, notamment à des intervalles de 10 minutes à 3 heures, avantageusement de 30 minutes à 2 heures, notamment d'1 heure ou de façon continue pendant la durée de la réaction.
Lorsque l'éthano! est présent dans !e milieu réactionnel, on ajoute avantageusement le composé de formule (!) à réduire à un mélange de Sa base et de dithionite de sodium, notamment en suspension dans l'éthanol, au début de la réaction et non par portions.
Dans ies procédés de préparation des composés de formu!e (IV) et (V) te!s que décrits ci-dessus, l'étape de mise en contact est avantageusement suivie d'une étape
de chauffage à une température comprise entre 20 et 110 °C, avantageusement entre 40 et 100 °C, notamment à une température de 90 °C ou 100 °C.
Dans ies procédés de préparation des composés de formule (IV) et (V) tels que décrits ci-dessus, ie produit est purifié à l'issue de la réaction. Les méthodes de purification de produits sont connues de l'Homme du Métier.
Selon un mode de réalisation avantageux, le milieu réactionnef est refroidi à température ambiante et un solvant permettant de faire précipiter Ses seis, notamment un alcool, de préférence i'éthanol, est ajouté au milieu réactionnel. Le milieu réactionnel est agité puis filtré pour éliminer les sels. Cette étape peut être répétée plusieurs fois. Avantageusement, la solution aqueuse est lyophilisée et le produit de formule (IV) ou (V) est redissous dans un solvant polaire aprotique, avantageusement anhydre, tel qu'un alcool, avantageusement I'éthanol ou î'isopropanol. Bien entendu, le produit de la réduction peut être purifié par toute méthode connue de l'Homme du Métier telle que la HPLC préparative, la chromatographie en phase inverse ou la recristaiîisation.
Exemples
Exemple 1 : Réduction du D-xylose en D-xylitol
Dans un ballon de 25 mL, muni d'un barreau magnétique et d'un réfrigérant, sous flux de N2, une solution aqueuse (5 mL) composée de 546 mg (6,5 mmol) de NaHC03 et 244 mg (1 ,4 mmol) de Na2S204, est additionnée à 758 L (1 mmol) d'une solution aqueuse de D-xylose à 25 % (m V). Une solution limpide jaune pâle est obtenue. Celle- ci est chauffée à 90°C, sous agitation et sous flux de N2. Après 1 h de chauffage, un nouvel ajout de 244 mg (1 ,4 mmol) de Na2S204 est effectué. Cet ajout est ensuite répété 2 nouvelles fois, chaque ajout étant espacé du précédent d'une heure. Après 20 h de réaction, le milieu est lyophilisé puis le résidu sec est repris à I'éthanol anhydre (5 x 20 mL). La concentration de l'extrait éthanolique fournit le D-xylito! avec un rendement de 83 %.
Exemple 2a : Réduction du 4,8-anhydro-1 ,3-dideoxy-D-glycero-L-manno-2- Nonulose (1) en solution aqueuse
Dans un ballon de 25 mL, muni d'un barreau magnétique et d'un réfrigérant, sous flux de N2,une solution aqueuse (5 mL ) composée de 546 mg (6,5 mmol) de NaHC03 et 244 mg (1 ,4 mmol) de Na2S204, est additionnée très lentement à 758 μί (1 mmol) d'une solution aqueuse de 4,8-anhydro-1 ,3-dideoxy-D-glycero-L-manno-2-Nonu!ose 1 à 25 % (m V). Une solution limpide jaune pâle est obtenue. Celle-ci est chauffée à 90°C, sous agitation et sous fiux de N2. Après 1 h de chauffage, un nouvel ajout de 244 mg (1 ,4 mmol) de l\lazS20 est effectué. Cet ajout est ensuite répété 2 nouvelles fois, chaque ajout étant espacé du précédent d'une heure. Après 20 h de réaction, le milieu est iyophilisé puis le résidu sec est repris à l'éthano! anhydre (5 x 20 mL), La concentration de l'extrait éthanolique fournit le produit de réduction 2.
Le dithionite de sodium constitue un très bon substitut à NaBH4 et à l'hydrogénation cataiytique sous pression.
Exemple b : Réduction du 4,8-anhydro-1,3-dideoxy-D-glycero-L-manno-2- Nonulose (1) en solution aqueuse en présence d'éthanol.
Matières Premières
Mode OPERATOIRE
Dans un bico! de 1 L muni d'un réfrigérant à eau et d'un barreau aimanté, le carbonate de sodium (29,7 g) et le dithionïte de sodium (49,1 g) sont chargés successivement sous atmosphère inerte. L'éthanoi (200 mL) est ajouté sous agitation jusqu'à obtenir une suspension blanche homogène. L'eau (75 mL) et Sa solution aqueuse de 4,8- anhydro-1 ,3-dideoxy-D-g!ycero-L-manno-2-nonulose (100 mL) sont ensuite ajoutés sous agitation. Le milieu réactionnei est ensuite chauffé dans un bain d'huile à 100 °C
afin d'atteindre un reflux soutenu pendant 4 heures. Le milieu réactionnel est alors refroidi à température ambiante. De i'éthanol absolu est ajouté et ia suspension résultante est agitée pendant 5 à 10 minutes puis est filtrée sur fritté (porosité 3). Le résidu solide est repris avec une solution eau-éthanol puis la pâte obtenue est filtrée. Le filtrat couleur jaune pâle est rapidement évaporé sous vide jusqu'à obtention d'un liquide visqueux couleur jaune miel. Le liquide obtenu est dissous dans un mélange eau / éthanol. Le milieu est agité pendant 15 à 20 minutes puis est filtré une seconde fois pour éliminer les sels précipités. Cette dernière étape peut être reconduite.
Claims
1 . Utilisation du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanol, pour la réduction d'au moins une fonction aldéhyde, hémiacétal ou cétone d'un composé de formule (I) hydrosoluble en l'absence d'un solvant organique non-miscible à l'eau et en l'absence d'un agent de transfert de phase :
dans laquelle :
X est choisi dans le groupe constitué de CH2 et O ; n = 0 ou 1 ; m = 0, 1 ou 2 lorsque n = 0 et m = 0, 1 , 2 ou 3 lorsque n = 1 ;
Y est choisi dans le groupe constitué de OH ;
; et OR5
R5 est choisi parmi alkyie en Ci à C12 ; glucide, oligosaccharide ; poiysaccharide ; pyranyle, furanyie ou polyol. p = 0, 1 ou 2, avantageusement 1 ou 2,
Ri est choisi dans le groupe constitué de H ; CH2OH et CH(OH)-CH2OH ;
Rz et R3, identiques ou différents, sont choisis dans le groupe constitué de H ; alkyie en Ci à C12, éventuellement substitué ; aryle, éventuellement substitué ; hétéroaryle, éventuellement substitué ; avantageusement H ;
R4 est choisi dans le groupe constitué de H ; alkyie en Ci à C12, éventuellement substitué ;
Z, identiques ou différents, sont choisis dans le groupe constitué de OH ; alkyie en C, à C12, éventuellement substitué ; F ; SR6 et NReRr et remplacent 0 ou 1 atome d'hydrogène sur 0, 1 ou 2 CH2 du cycle lorsque n = 0 ou remplacent 0 ou 1 atome d'hydrogène sur 0, 1 , 2 ou 3 CH2 du cycle lorsque n = 1.
R6 est choisi dans le groupe constitué de H, alkyle en à C12, éventuellement substitué ;
R7 est choisi dans le groupe constitué de H ; alkyle en C-] à C12, C(=0)R8 où R8 est choisi parmi alkyle en Ci à C z, éventuellement substitué ; aryie, éventuellement substitué ; hétéroaryle, éventuellement substitué ; ou R6 et R6 forment avec l'azote auquel ils sont liés un cycle à 5 ou 6 chaînons, éventuellement substitué, étant entendu que soit Y représente OH ou OR5 et X représente O ; soit Y représente

4. Utilisation selon l'une des revendications 2 ou 3, dans laquelle Ri est H ou CH2OH, avantageusement H, et Y est (CH2)PC(=0)R4.
5. Utilisation selon l'une des revendications 1 ou 2, dans laquelle le composé de formule (I) a la formule (lil) suivante :

6. Procédé de préparation d'un composé de formule (IV) :
(Z)m comprenant l'étape de mise en contact d'un composé de formule (I) tel que défini à la revendication 1 :
dans laquelle X est O et Y représente OH ou OR5 avec du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanoi, dans un milieu aqueux en l'absence d'un solvant organique non- miscible à l'eau et en l'absence d'un agent de transfert de phase.
7. Procédé de préparation d'un composé de formule (V) :
(Z)m comprenant l'étape de mise en contact d'un composé de formule (I) tel que défini à la revendication 1 :
dans laquelle Y représente C(R2R3)C(=0)R4, avec du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanol, dans un milieu aqueux en l'absence d'un solvant organique non- miscible à l'eau et en l'absence d'un agent de transfert de phase.
8. Procédé selon la revendication 7, dans lequel l'étape de mise en contact entre le composé de formule (I) et le dithionite de sodium est réalisée en présence d'une base soluble ou non dans l'eau, avantageusement choisie parmi les hydroxydes, les hydrogénocarbonates, les carbonates, l'hydrotalcite et les bases calciques biosourcées issues de la calcination de plantes, d'algues calcifiantes ou de coquilles de mollusques.
9. Procédé selon l'une des revendications 7 ou 8, dans lequel la mise en contact est suivie d'une étape de chauffage à une température comprise entre 20 et 110 °C, avantageusement entre 40 et 100 °C, notamment à une température de 90 °C ou 100 °C.
10. Utilisation selon l'une des revendications 1 à 3, du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanol, pour la préparation d'un poiyol, notamment choisi parmi le xylitol, l'érythritoi, l'isomalt, le maltitol, le mannitoi, le sorbitol, et le lactitol.
11. Procédé de préparation d'un poiyol choisi parmi :
• le xylitol, comprenant l'étape de mise en contact du xy!ose avec du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanol,
• l'érythritoi, comprenant l'étape de mise en contact du érythrose avec du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanol,
l'isomalt, comprenant l'étape de mise en contact de l'isomaltose avec du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanoî,
le maltitol, comprenant l'étape de mise en contact du maltose avec du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanoi,
le mannitol, comprenant l'étape de mise en contact du mannose avec du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanoi,
le sorbitol, comprenant l'étape de mise en contact du glucose avec du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanoi, et
le lactitol, comprenant l'étape de mise en contact du lactose avec du dithionite de sodium, avantageusement en présence d'un alcool, notamment d'éthanoi,.
