Description

Packaging for Consumable Products
Technical Field The present invention relates to packaging for a consumable product having a temperature- sensitive edible component such as icing or frosting, particularly for presenting baked products in a retail store.
Background
Consumable products such as baked products such as bread, biscuits, cakes and the like are frequently packaged when offered for sale in a retail environment. Such packaging needs to meet a number of technical requirements, such as providing protection to the bakery product from physical harm as well as keeping the bakery product fresh and to lengthen its shelf-life.
Generally such packaging is designed to keep out the ambient air, as this is a primary cause of a short shelf-life of bakery products. Additionally it is necessary to prevent the ingress of surrounding particulate matter from entering the packaging, such as dust.
Some consumable products comprise a temperature-sensitive edible component which can melt if the temperature is increased above ambient conditions. Such temperature-sensitive components include toppings such as icings or frostings. It has been found that, particularly with air-tight packaging, that the internal temperature can increase markedly above the ambient outside temperature, causing premature melting of such toppings. This has the effect of the product being wasted and thus the shelf-life is reduced. This problem is all the more prevalent with transparent packaging commonly used for bakery products, e.g plastic transparent packaging. It is believed that such packaging provides a greenhouse effect so that heat is generated from ambient light which cannot escape the packaging at the same rate, thus increasing the internal temperature where temperature- sensitive components can melt. However the present inventors have now found a way to provide packaging which prevents the rise in the internal temperature of the packaging, thus increasing the shelf-life of the product. Summary of Invention
It has been surprisingly found that by introducing air channels of a particular design into the structure of the housing of the packaging, such melting issues can be solved without reducing shelf-life, and in fact increasing shelf-life.
The present invention relates to packaging for a consumable product having a temperature- sensitive edible component, wherein the packaging comprises a housing which provides an enclosed environment for the consumable product, wherein at least one air channel is provided, which exposes the interior of the housing to the outside atmosphere, wherein the air channel comprises at least one bend so as to prevent a rigid implement from entering the interior of the packaging via the air channel without colliding with the walls of the packaging.
The present invention thus provides for a mechanism for allowing temperature equalisation with the outside atmosphere without compromising the integrity of the packaging or its ability to preserve shelf-life.
It has been surprisingly found that providing packaging with openings can in fact provide greater shelf-life than packaging with no openings. This is despite the fact that exposure to the air is known to decrease shelf-life.
Preferably the at least one air channel comprises at least two bends, preferably three bends. Multiple bends provide greater protection against foreign bodies entering the packaging, e.g. dust or other ambient entities which can influence the hygiene or product safety aspects of the consumable product stored inside.
Typically, the number of air channels is from 3 to 20, preferably from 5 to 15. It has been found that a number of reasonably sized air channels is better than a small number of very large channels or a large number of very small channels.
Typically the packaging is formed of an upper portion and a lower portion, the two porti being removably attached to each other, preferably hingedly attached to each other. In such packaging one of the portions preferably comprises a rim of exposed packaging material which, in use, enters a corresponding depression in the packaging material on the other portion so as to form a closure means once the upper and lower portions are brought together. The rim may be positioned on the upper or the lower portion, but is preferably placed on the lower portion.
Typically, the rim and depression provide an air-tight seal once brought into contact with each other. In such an embodiment, the at least one air channel can be provided by providing for a gap between the rim and depression at a selected location. This can be provided by a section of narrowing of the rim or enlargening of the depression, so as to form an air channel passing between the rim and depression in the selected location. Thus the air can then flow into the packaging by passing over the rim between the rim and depression, thus providing for three bends in the air channel.
Preferably the rim has a thickness of from 3 to 8mm and a height of from 3 to 8mm, with the depression having a corresponding dimension so as to just allow the rim to enter the depression, forming the closure means by friction.
In a preferred embodiment the narrowing of the rim or enlargening of the depression is by from 1 to 3 mm in the thickness relative to the tight-fit discussed above.
Preferably the rim and depression are located around the perimeter formed by the upper and lower portions coming together.
The air channels are preferably elongate in cross section, preferably substantially rectangular in cross-section, with a major dimension of from 10 to 40mm and a minor dimension of from 1 to 5mm.
The packaging is preferably made from transparent plastic material, preferably PET and may be a single piece of thermoformed construction.
In a preferred embodiment, the packaging contains a number of depressions for the bakery product to rest within, preferably two depressions. The consumable product is typically a bakery product and can be any bakery product such as bread, biscuit or cake-based. However, preferably the bakery product is cake-based.
The temperature-sensitive edible component can be any topping which melts or otherwise deteriorates when the temperature rises significantly above ambient temperatures, e.g. above 30°C or above 35°C, such as an icing, fondant or frosting. Preferably therefore the consumable product contains a quantity of a sugar-containing topping which is sweet, often creamy glaze made of sugar with a liquid, such as water or milk, that is often enriched with ingredients such as butter, egg whites, cream cheese, or flavorings.
The invention also relates to the packaging comprising the consumable product.
The invention will now be illustrated, by way of example and with reference to the following figures, in which:
Figure 1 is a plan view of a bakery packaging according to the present invention.
Figure 2 is a side view of the bakery packaging shown in figure 1. Figure 3 is a perspective view of the bakery packaging shown in figure 1.
Figure 4 is a perspective view of the bakery packaging shown in figure 1 which has been closed. Turning to the figures, Figures 1 to 4 show packaging 10 for two bakery products such as iced cakes, e.g. two Belgian buns. The packaging is made from a single thermoformed piece of transparent PET and comprises an upper portion 12 and a lower portion 14. The packaging is formed by closing a hinge 16 bringing together the upper portion 12 to the lower portion 14.
The lower portion 14 is formed two depressions 18, 20 each for supporting a cake, e.g. a Belgian bun.
The lower portion 14 also has an exposed rim 22 which runs all the way around the perimeter of the lower portion. Provided in the upper portion 12 is a corresponding depression 24, so that when the packaging is formed the rim 22 enters the depression 24 firmly, to provide a seal and prevents the upper portion 14 and lower portion 12 coming away from each other prematurely. The rim has a thickness of 6mm and a height of 5mm.
Also provided around the upper rim of the lower portion 14 is a number of narrowed sections 26 where the rim 22 has been narrowed to have a thickness of 3mm and a height of 3mm. The narrowed portions are 20mm or 30mm in length.
When the upper portion 12 is closed onto the lower portion 14, the rim 22 inters the depression 24 to form a tight fit, thus providing the closure means by friction. However, the narrowed sections 26, do not come into contact with the depression and thus form air channels 26 to the interior of the packaging. The air channels thus formed have a U-bend nature with three bends, thus preventing foreign bodies from entering the packaging whilst providing an air channel.
When placed in a retail store for sale, any increase in internal temperature is alleviated by the air channels providing a means for the heated internal air to equalise with the cooler ambient air. This prevents the temperature from rising as high and prevents any
temperature-sensitive component from melting, thus increasing shelf-life.
